Having guests and want to provide a healthy dessert you can make in less than 45 minutes?  Here’s a recipe for a delicious, light vanilla cake made especially with heart healthy olive oil in place of vegetable oil.   Use lactose free milk or soy milk for those with lactose intolerance. Healthy Vanilla Cake Recipe

(serves A LOT)

You’ll need:

-4 eggs

-1 cup fat free soy milk

-1 tsp vanilla

-2 1/4 tsp baking soda

-1 1/2 cup sugar

-2 1/2 cup flour

-3/4 cup olive oil

-fat free non-stick cooking spray (PAM)

Pre-heat the oven to 325 degrees F.  Grease with PAM a 9×13 inch cake pan. In a large mixing bowl, mix sugar and eggs together until slightly thickened, about 1 minute. Add flour, milk, oil, baking powder, and vanilla and mix for another minute, just until the batter is smooth and creamy. Pour batter into the prepared baking pan.  Bake for 30-40 minutes or until tops are golden brown.  Test at 30 minutes by sticking a knife in the middle of the cake.  If it comes out clean, it’s done!

Allow to sit 10 minutes before serving.  Top with powdered sugar or icing (optional).

Because it uses olive oil instead of vegetable oil, it’s healthier, lighter, and still tastes great.
